I have to say I have a bit of an advantage and a disadvantage. My advantage is that I don't have an outside job and I stay home all day. The disadvantage is; I am a mom of 3 and I homeschool my oldest. But, in the midst of the chaos I got my game on and was able to complete my first 2 recipes. Yay! I am using the Pillsbury Complete Cookbook that I got for my bridal shower gift 11 years ago.
Dinner: Huevos Rancheros (p.245) It turned out pretty good. I used Feta Cheese for the first time and well it was good I'm not sure it was worth the extra money. My kids liked the fried eggs but did not like the beans/salsa mixture. I also made Rustic Italian Bread (p.51) This turned out very good and was pretty easy.
